These muffins are super yummy and a lot healthier than most muffin recipes. I usually make two muffins pans full and put extra in the refrigerator for breakfast the next morning.
Ingredients: (printable version)
2 cups dry oatmeal
2 cups (yogurt, milk, buttermilk)
2 eggs or egg whites
1/2 sugar, brown sugar, honey or maple syrup
2/3 cup of oil
2 1/2 cup of flour
1 teaspoon of Baking soda
1 teaspoon of salt
2 teaspoons of baking powder
Mix it all in well. It will look a little like cookie dough when you are done and you just heap by the spoon full into the muffin pans. (uses two). If you want add a couple of handfuls of berries, apples or a banana in for flavor.
Bake 400 degrees for about 20 minutes.
